Lemon Vinaigrette Potato Salad recipe is a delicious alternative to the traditional mayonnaise-based potato salad, making it great for summer. The fresh herbs complimented by the lemon vinaigrette is so tasty, we had to share it with you!

HOW TO MAKE LEMON VINAIGRETTE POTATO SALAD
STEP 1: POTATOES
Cut about 3 pounds of red potatoes into cubes.
Place the potatoes in a large sauce pan and cover with water. Bring to a boil and cover while you reduce the heat, allowing the potatoes to simmer for 10-15 minutes.
STEP 2: VINAIGRETTE
While your potatoes are cooking, grab a small bowl and prepare your vinaigrette.
Whisk together olive oil, lemon juice, minced basil and parsley, red wine vinegar, lemon peel, and salt and pepper.
STEP 3: COMBINE
Drain your potatoes when they are nice and tender.
In a large bowl, add your potatoes, finely chopped onion, and drizzle with the vinaigrette.
Toss and make sure everything is mixed well and coated.
Serve warm or chilled.
