Pre-heat your oven to 350 degrees.
In a large pot, cook your bacon until it is crispy. Then, add garlic, breadcrumbs, chives, and parsley. Stir and cook the mixture until the breadcrumbs are nice and toasted.
Remove the mixture from the pot and set aside.
In the same pot, melt butter and sprinkle in flour. Stir until combined.
Add evaporated milk and bring to a simmer. Season the sauce with salt, pepper, mustard powder, and cayenne pepper.
Whisk mixture until incorporated and smooth.
You will know the sauce is ready when it is thick enough to coat the back of the spoon.
Add the cooked pasta and stir until the mixture is well combined with all of the pasta.
Now, it’s time to get cheesy!
Fold in the cheddar, gruyere, colby jack, gouda, and provolone cheese.
Transfer mixture to a baking dish and top with shredded mozzarella and cheddar cheese.
Bake for 45 minutes and until the top is golden brown.
Serve with a sprinkle of the bread crumb mixture and enjoy!
